Preparing shrikhand requires yogurt to be tied in a cotton cloth and left under pressure to drain. In the past, it used to be hung from a wall to achieve the desired thickness. The strained yogurt and sugar are mixed thoroughly in a deep bowl. Cardamom, saffron, and any other flavours are then added and mixed. It is left in the refrigerator for the sugar to dissolve. Shrikhand is best served chilled and naturally lends itself to be made ahead of time. |
Preparation of Shrikhand is now carried out locally here in Durban using organic locally produced unprocessed milk, except for pasteurisation.
